An Evening with Haykin Family Ciders

For August, since it's still hot, we thought we'd take a fun detour to explore a nice, refreshing, and cool fermented beverage.

While curating sparkling wine from wineries across Colorado for an upcoming whiskey event, a cidery in Denver was suggested by a Palisade winemaker. While on a visit to Denver in the spring, we stopped by Haykin Family Cider in Aurora to taste through their ciders. While we appreciate fermented ciders, they typically aren't a go-to drink. However, after a first sip, we were absolutely BLOWN AWAY by what is being produced by the Haykins. Their ciders are created as sparkling cider (think champagne, cava, prosecco) and as a way to honor the apple, like wineries honor the grape. They use a variety of methods to create their sparkling ciders, including the Charmat Method, Traditional Method, and Methode Ancestrale.
